Can you freeze salsa?

You can absolutely freeze salsa. But keep in mind that when you freeze vegetables—especially watery ones like tomatoes—the structure and consistency can change when you thaw it. You’ve got a few ways to deal with this, though, to make sure your salsa is chip-ready when you pull it out.

Freeze the salsa as-is. When it thaws, pour off the extra water. For fresh salsa, separate the chunks from the liquid with a strainer. Freeze the chunks and the liquid separately. When you’re ready to eat, thaw them both then mix them together. For cooked salsas, simmer them over a low heat until they thicken. This will remove excess liquid. Let cool, and then freeze.

Because of the consistency change after freezing (it becomes mushy), you may prefer to use it as an ingredient in something else rather than as salsa on its own when you thaw it.

What container should I use to freeze salsa?

Salsa expands when it freezes due to the liquid content. So to freeze it, you can use anything that has room for that expansion. Try Ziploc bags, or freezer-safe containers or mason jars with at least an inch of headspace.

How long does salsa last in the fridge?

Your fresh homemade salsa will last for about four to six days in a covered container in the fridge. If it’s been in there for longer but you think it might still be OK, use your senses to decide for sure. If it smells bad, toss it. If it’s thicker then it should be, throw it out. If it tastes weirdly tangy or acidic, pitch it.

Is salsa healthy?

Yes! Salsa is healthy—and it’s no surprise with all the fresh veggies in it. Aside from low calories and a great taste, it’s also chock full of vitamin C, potassium and antioxidants. So eat up!

Does salsa go bad?

Just like all fresh foods, salsa can definitely spoil. There aren’t too many preservatives or preserving agents like vinegar in salsa, which would typically keep it safe longer. Be sure to examine what your salsa looks like, smells like and tastes like if it’s been in the fridge for a week or more before eating it all.

Does salsa need to be refrigerated?

Salsa should always be kept in the fridge after you make it. It’s all fresh ingredients, and they will spoil pretty quickly if left out.

But if you’re making these salsa recipes, be sure to check the ingredients for things like white vinegar, soy sauce and Worcestershire, all of which can contain gluten.
