I usually love pancakes, waffles, muffins or quick breads for breakfast. On other days, I like a breakfast quesadilla—whether it’s filled with cheese, eggs, meat or a combo. To assemble, simply spray a nonstick fry pan with oil, add a tortilla, top with toppings, add another tortilla and fry on each side for a few minutes gently pressing down until the cheese is melted. Once golden and crispy-looking, transfer to a cutting board to cut into individual quesadilla segments.
